Hello Dave, Standard A36 mild steel works well. That is what I make most of my tongs from, mainly because it is on hand and is inexpensive. These have held up to every day use very well unless they are over-heated in use or used as they are not intended to be, such as twisting cold steel. 8620 alloy will make a tougher pair of tongs if you want to invest a little more and make tools that will hold up better over time.
