I'm working only with goat milk from Nubians & LaManchas. My curds don't get as big as in the video, is this normal? Do I need to let it sit for longer?

When you are making cheese with goats' milk, you'll need to add the rennet when the milk reaches 84 degrees (F). When making cheese from goats' milk it's normal for the curds to be smaller than they are with cows' milk.
