Italian Cheese Trio: Parmesan, Mozzarella and Ricotta
Step into the kitchen at Brazos Valley Cheese for an immersive four-hour, hands-on cheese-making experience designed for beginners and food lovers alike. In this guided class, you’ll learn the art and science behind crafting one of the simplest aged cheeses alongside some of the most beloved fresh varieties.
Together, we’ll create a batch of Parmesan, mozzarella, and ricotta from start to finish. Then, you’ll spread out for a truly hands-on moment—each student will individually stretch their own mozzarella curds to form a fresh, silky ball of cheese. You’ll also craft your own personalized ricotta, experimenting with unique flavor combinations to make it truly your own. Everyone will take home the cheeses they make in the class.
Midway through the class you’ll enjoy a curated tasting of artisan, cave-aged cheeses from our shop, giving you the opportunity to explore complex flavors and textures while learning what makes each one special.
After class, browse our retail shop—filled with artisan cheeses, charcuterie accessories, and gourmet goods—and enjoy a special student discount. Whether you’re looking to expand your culinary skills or simply spend a delicious morning with friends, this class offers the perfect blend of education, creativity and indulgence.

Starting in May 2025, these classes will be taught at our
Brazos Valley Cheese Shop at 230 Halbert Lane, Waco TX.
This is a Half-Day class from 9 a.m – 1:00 p.m.
All our classes close 24 hours before the class date with the exception of classes that start on Monday, which will close the Friday before. If there’s a class that closed early that you’d like to attend, please call us at 254-754-9620 to check for availability.
